Millions of years ago, the area around what’s now the small town of Chablis was covered by sea. In the Jurassic era, the sediment-enriched clay of the Chablis region began to form and it’s this clay that gives Chablis wine its unique elegance, freshness and complexity.

What typically characterizes Chablis wines?They are naturally relatively sinewy, high in acidity and steely rather than luscious and oaky.An archetypally refreshing, long-lived style of white wine which very few wine regions, possibly none other than Chablis, can produce.

19th and 20th century Ireland was a golden era both for Irish whiskey and for great Irish novelists and poets.
It’s perfect for our theme today, celebrating Valentines Day because Irish Whisky is for HIM and for HER! It is being enjoyed by both men and women. In fact, in 2014, women in the US represented 37% of whisky drinkers up from the 1990’s. Check out Women Who Whiskey!

About Irish Pot Still Whiskey

Single (or Pure) pot still whiskey is a type of whiskey traditionally made from a mixture of malted and unmalted barley distilled in a pot still. It is unique to Ireland. Not to be confused with blended whiskey, which is a mixture of column still unmalted grain whiskey and pot still single malt whiskey, “pure pot still” is a single whiskey made from a batch of Barley composed of both unmalted and malted barley that has been distilled in a pot still.

Pure Pot still came about in 1802 as a reaction to the introduction of Tax’s by the British on Irish Malt Whiskey. Irish Whiskey accounted for 90% of all the worlds exported whiskey and was seen as a cash cow by the British. By introducing this tax they hoped to “Cash in” on their neighbors good fortune. However in an effort to avoid taxes the Irish Distiller decided to use a higher percentage of unmalted barley (as opposed to Malted Barley) into the still. This resulted in a very different style of Whiskey and one which we have come to know as “Pure Pot Still Irish Whiskey”. This style of Whiskey became known as the Champagne of Irish Whiskey. The much sought after liquid was a favorite with Irish writers through the 19th and 20th century.

Although Pure Pot Still was once widespread in Ireland, a number of historical factors including the The Irish War of Independence, the Irish Civil War, and prohibition in the United States led to a drastic reduction in the number of Irish distilleries. With this reduction in Irish whiskeys available came the loss in recognition abroad of the pure pot still style itself. The majority of the surviving distilleries began to produce blends and single malts to the detriment of the Pure Pot Still.

Bordeaux still until today defines the finest red wine in the world and for many winemakers whether in California, Italy or Spain in the old world or Chile, Argentina or California in the new, it is the benchmark. I’d like to wish you a Happy New Year. Thank you for spreading the joy of wine throughout the year! Once again as we head into 2017 I have a question for you.  How do we lose the extra five pounds we have been gifted and still enjoy an occasional glass of wine?  Which wines are the least caloric?

DEAR JACKIE,

Happy New Year to you as well and we must confess, we too have been similarly gifted!
Here’s the good news, if it is only an occasional glass of wine, and time is not of the essence, the additional 100-125 calories/ 5 ounce glass shouldn’t impede your progress too badly. In fact, there are many diets out there that actually allow for an occasional glass or two such as Weight Watchers and L.A. Weight Loss.  Even the popular ketogenic diet has a place for vino says Dr. Dominic D’Agostino of Keto//OS. In fact there is one company, Dry Farm Wines, deemed “ketogenic friendly”  that we are looking at bringing in, so keep an eye out for that.

We would order cialis from uk like to offer a word of caution though, if you are anything like us, we tend to bring out the assortment of cheeses, dried fruit and nuts to accompany our wine.  This behavior is definitely better reserved for post diet times.

Opt for wines that come from cooler climates such as Germany, Austria, New Zealand and Ontario to name a few.  Cooler climate regions tend to produce lower alcohol wines that are 12% or 12.5% , and Germany has one as low as 9%. Last week I had a wine that reminded me of pears so much in the taste and smell, that I wondered if pears were used to make it, or at least added to the wine.
Is this possible? If not, how is it that so many wines are described as having tastes and smells of such a variety of fruits and other foods? I’ve heard of blackberries, plums and even blueberries, not to mention one that really threw me – green peppers! Are there any wines that smell like grapes?

DEAR ERICA,

We are pretty sure there are many people out there who are wondering the exact same thing. There is actually a logical explanation for how someone might recognize a variety of familiar smells, such as pears, when it comes to the aroma of a wine. All foods and drinks are made up of a complex combination of molecules, some being more aromatic than others.

Scientists have been able to identify some of these molecules. They have discovered that if present in a certain food and wine, a similar smell can be detected.

Take pears for example.According to “Editions Jean Lenoir” creator of Le Nez du Vin, it’s been demonstrated that hexyl-acetate, one of the typical compounds found in pears, is responsible for the scent of a pear found in wine. Green peppers, sometimes detected in the aroma of Cabernet Sauvignon or Cabernet Franc, also shares a similar compound called methoxy-2-isobutyl-3pyrazine. The most recent discovery was the peppery character that is often detected in wines such as Shiraz from Australia or Syrah from Rhone. Australian researchers detected a trace of a peppery molecule in Shiraz wines.  They discovered the same molecule in ground white pepper. This peppery character in Shiraz grapes can be identified as a chemical called rotundone.  This is all fascinating information, which explains why winemakers consider winemaking a blend of both science and art.
