Up next on this week’s audio podcast we welcome just awarded the 2017 Niagara Lifetime Achievement Award, President and Co-Founder Cave Spring Cellars, Len Pennachetti. Although much too young for this honour it however shows what he has accomplished and given to the area.

Cave Spring Cellars goes back multiple generations starting with Len’s grand-dad Giuseppe Pennachetti. He came to Canada from Fermo, Italy. At that time he followed his love of wine and in time planted the native Labrusca grape. He however knew much more was possible!
Cave Spring Cellars is known for being among the first to plant the vitas vinifera grapes Riesling and Chardonnay. The vineyards are situated on one of the finest slopes of the Beamsville Bench. Len and his father founded Cave Spring Cellars in 1974 and planted these noble grapes in 1978.
Believing in the marriage of wine, food and hospitality, Len together with his wife Helen Young expanded the company to include On The Twenty Restaurant in 1993. In 1996 they and later added accommodations to the equation with building of Inn On The Twenty.

What better way to spend a Wednesday night in Toronto than meeting Ireland’s most lovely Celebrity Chef Clodagh McKenna, enjoying a beautiful Irish Christmas dinner complete with a glass of Guinness! Doesn’t get much better than this!
We were invited to Dish Cooking Studio for an intimate and interactive holiday entertaining event on November 28, 2018. Chef Clodagh McKenna shared her own personal holiday entertaining tips and tricks as well as providing a cooking demo of three holiday-inspired Guinness-based dishes perfect for the upcoming holiday season.

Guinness Prawn Tempura
METHOD
1. For the batter, sift the flour and soda together into a medium bowl. Make a well in the centre and add the egg and Guinness. Whisk from the centre outwards until just combined. Allow the batter to stand for a few minutes in a cool place.
2. Heat the canal oil in a deep heavy-bottomed pan until a breadcrumb sizzle and turn brown when dropped into it.

3. Dip the prawns into the batter and carefully add to the hot oil to deep-fry in batches for 2-3 minutes or until crisp and golden. Carefully remove with a slotted spoon and drain on kitchen paper.
4. To make the chilli aioli crack the egg yolks into a bowl along with a teaspoon of dijon mustard and lightly whisk. Whisk the oils into the egg yolks slowly. The agile will begin to get thick and creamy. Stir in the white wine vinegar, garlic and chilli flakes. Season with sea salt and freshly ground pepper.
5. Serve the chilli aioli with the Guinness prawn tempura log its the rosemary salt.
Roast Pancetta Wrapped Turkey with Guinness and Chestnut Gravy
METHOD
1.Pre-heat the oven to 4ooF/gas mark 6
2. If you are using a frozen turkey its best to thaw the bird in the fridge. A turkey will need about 24 hours to thaw for every 4 lbs. Take the turkey out of the fridge one hour before roasting to allow the meat to relax and come to room temperature, which will make the meat more tender. Next remove the giblets from the inside the bird’s cavity because these cannot be cooked with the turkey. Wash the cavity and dry completely with kitchen paper, then season with sea salt and freshly ground pepper.

3. Fill the cavity of the turkey with sprigs of fresh thyme, the cavity should only be filled half way to allow hot air to circulate and the turkey to to cook more evenly. Line the roasting tray first with the shallots, carrots, garlic and thyme. Place the turkey on top. This will flavour the turkey even whilst cooking.
4. Next stretch the strips of pancetta by rolling them with a rolling pin. Then arrange about three -quarters of the pancetta over the breast, overlapping the slices and wrap the legs and thighs with the remaining pancetta. Tuck the slices of orange around the turkey.
5. Lastly, place the turkey in the pre-heated oven. Then reduce the heat to 250F. After 45 minutes take the turkey out of the oven and baste the juices from the pan over the turkey. Cover loosely with tin foil and return to the oven and cook for three and a half hours. Continue to baste the turkey every 45 minutes.

6.Check to see if the turkey is cooked by inserting a skewer into the thickest part of the thigh. The juices should run clear. When you have taken the turkey out of the oven leave it to rest for 30 minutes with a loose tent of tin foil to keep it warm. This will allow the juices to redistribute themselves giving tastier meat.
7. Once the turkey has cooked and is resting on a board then make the gravy. Carefully pour 4 tbsp of the juices from the roasting tin into a saucepan and place over a medium heat. Whisk in the flour, followed by the Guinness chicken stock, thyme and bay leaf. Bring to the boil, then reduce the heat and simmer for 20 min, then whisk in the chestnut puree and season with sea salt and freshly ground black pepper. Strain the gravy into a jug, discard the herbs.
Guinness Maple and Ginger Pudding with Crystallized Ginger Caramel Sauce
METHOD
1. Sift the flour and soda into a bowl with the ground ginger. In a separate bowl, beat the butter with the sugar and maple syrup until light and fluffy. Beat in the eggs one at a time, followed by the Guinness. Fold the dry ingredients into the creamed butter and egg mixture adding the milk to give a soft dropping consistency. Stir in nuts and raisins.
2. Spoon the mixture into a glass bowl, then cover with greased grease proof paper and foil, ,making a pleat in the centre of both. Tie securely with string. Suspend the bowl over a saucepan half filled with water over a medium heat. When the water comes to a boil reduce the heat and reduce to simmer. Steam the pudding for 1 1/2 hours, checking regularly to make sure that the pan doesn’t boil dry.
Next make the crystallized ginger caramel sauce.
3. Next make the crystallized ginger caramel sauce. Place the butter, cream and maple syrup together in a small pan and stir over a low heat until well mixed. Bring to a boil, simmer for three minutes, then stir in the finely chopped crystallized ginger.
4. Carefully tip the pudding on to a serving plate or cake stand and pour the crystallized ginger caramel sauce on top.

Penfolds Grange…The crescendo of our “Ultimate Penfolds Experience”
Nestled in the foothills of Adelaide with views over looking the city, Magill Estate is one of the world’s few urban single vineyards only fifteen minutes drive from Adelaide, capital of South Australia. Here lie historic vineyards of the iconic wine Penfolds Grange. With sturdy and gnarly Shiraz vines that date back over sixty years. They thrive in rich chocolatey red-brown soils over limestone bearing exceptional fruit for both Grange and Magill Estate Shiraz.
Penfolds Grange, a remarkable wine with a remarkable story. This wine is sought after and relished by wine collectors and aficionados around the world, paralleled to the First Growths of Bordeaux and Grand Cru of Burgundy. This is Australia’s most celebrated wine, officially listed as a Heritage Icon of South Australia. A vinous star that has been described by Robert Parker’s wine Advocate as “the leading candidate for the richest, most concentrated dry red wine on planet earth”.
It all began with British physician Doctor Christopher Ralston Penfolds and wife Mary.
In 1844 the couple settled in Adelaide on a vast parcel of land and the inaugural Penfolds wine was created. Recently we had the opportunity to take a step back in time and tour the Magill Estate Cottage, the Penfolds’ home. And learned a little about the family and the history of these storied precious vineyards. We were honoured with a personalized tasting of several Penfolds wines. A suburb afternoon, punctuated by the tasting of the great Grange.
Old age is much respected in this world, the world of wine.
“It all starts in the vineyards” they say. Our visit which began with our tour guide, the truly eloquent Danielle Flower guiding us throughout the grounds and introducing us to the estate’s old vine Shiraz. Old age is much respected in this world, the world of wine. These smaller concentrated fruit will deliver little in yield yet intense and concentrated flavours in the glass. Where one may drink history. The estate was once comprised of over 500 acres but over time has been diminished to just 12. These grapes, we learn will contribute to the iconic Penfolds Grange. Grange, Penfolds flagship wine, the most collectible wine on the continent is a multi-vineyard, multi district blend, yet it has a unique personality, flavour, structure, experience coveted by wine lovers the world over.
The good Doctor, perhaps ahead of his time…
The Penfolds, Christopher and Mary, immigrated to Australia at the ages of 33 and 24 and were supported by their family members on what was approximately 500 acres of land. Doctor Penfolds a believer in the medicinal properties of wine cultivated a portion of the land with plantings of French grape vine cuttings brought over from England. Initially fortified wines were the choice prescription but in time, responding to increased demand the winery expanded in output and selection of varietals planted until 1844 when the winery was officially established. Over the years, under the direction of Christopher up until his passing at age 59 and then under that of wife Mary Penfolds the winery continued to grow and prosper. By 1903 Penfolds was the largest winery in Adelaide.
It is Max Schubert, Chief Winemaker for Penfolds in the forties and fifties who must be greatly credited to the development of the iconic wine, Grange, originally called “Grange Hermitage”. It was he, after travelling to Europe and spending time in Bordeaux who created and ultimately became responsible for the development of this iconic wine.

And an extraordinary experience featuring a perfect blend of Penfolds offerings.
Penfolds produces a range of wines that come from a variety of regions, whether they are blends, or singular varietal. They also produce estate wines of single vineyard. All the wines however showcase the Australian heritage including the diversity and the great history.
Our tasting included a blend of all of the above.
One of our personal standouts on this day was the 2008
St Henri Shiraz.
A multi district blend including fruit from the Barossa Valley and Eden Valley. St Henri Shiraz differentiates itself from high quality Australian reds by not relying on any new oak.
Maturing instead in large old 1460 litre vats the wine’s character develops with little impression of oak. We comment on the seductive nose of intense blueberry and blackberry layered with dark chocolate. With a deep rich flavour of more dark fruit and chocolatey notes, it is rich and opulent with a long lasting finish! Drinking window suggestion is 2016-2035. Available on occasion at the LCBO and/or featured at Winemaker’s dinner as recently as October 26th of this year.
We tasted the 2011 Cellar Reserve Cabernet Sauvignon from the Coonawarra, exceptional! And to start the 2008 Yattarna Chardonnay, also multi regional.
The crescendo of our “Ultimate Penfolds Experience” was of course Grange.
Suffice to say an ethereal taste experience. Where wine is not simply a drink, it is history, it is place, it is magical, on this day it is Grange.
Of this wine says Chief Winemaker Gago, “Aromatically captivating/convincing— similar to the 1987 in its formtive years, stronger than the 1997!”
At the conclusion of our tasting, as we sipped on what little treasure remained in our glasses. Danielle shared with us Penfolds’ latest unique and extraordinary offering to its most devoted fans.
This most recent project allows one to purchase their own personal barrel of Penfolds wine for $198,000. Magill Estate will house your barrel under 24 hour/day security. Your wine will be available for you to check in on at any time from anywhere in the world. The custodian of this barrel is invited at any time to taste, assess the wine and determine when and how it should be bottled under the guidance of course of Chief Winemaker Peter Gago.
Gago who started at Penfolds in 1989, is himself a celebrity winemaker, in high demand internationally, only the fourth custodian of iconic Grange. Peter succumbed to his love of wine and as he puts it “the grip of the grape” … we guess was just too great!
For those of whom we have whet your appetite, the 2008 Grange is available here at the Tasting Room in the Olde Oakville location. Here we ponder the purchase of one of three remaining bottles priced at $499.00.

The Luxury Chocolate Toronto Show is the place to sample and buy your chocolate for the coming Holiday Season. One of Italy’s many claims to fame, is of course their very own sparkling wine, growing in popularity day by day. Not only is it a wine, but it is a place, and it is a grape and there is a bit of confusion out there about this delightful and delicious bubbly and that is Prosecco. There is much more to this bubbly, with an interesting history, than many might know. We are excited to share with everyone at the show a very special winery, located in the Friuli region in northeastern Italy, the wine Castel Pitars winery. Here is a wine producer that dates back to 1510, steeped in tradition, now run by four brothers producing an exciting array of wines, along with their Prosecco, wines of indigenous grapes, international varietals and unique blends.
