DEAR THE WINE LADIES,

I would love to surprise my husband with a fabulous homemade dinner made with one of his favourite meats bison. I am not too familiar with this meat. Leaning toward a ribeye and wondered if you have any suggestions on which wines might pair well. Any ideas on how best to prepare and perhaps even source these meats? I live in a rural area so there’s not too much availability in my neck of the woods.

We too are fans of the various meat alternatives such as bison, becoming increasingly more popular in restaurants and more available in butcher shops. Bison (often used interchangeably with buffalo meat) is known to be leaner and less dense than beef and is widely accepted as one of the tastiest and healthiest all-natural alternatives to the traditional meats.

When it comes to wine pairing, this meat has considerably less fat than beef, wines with less tannin will make for a better match. WHAT IS TANNIN? Tannins come from the skins, stems, and seeds of the grapes. As well as from the oak barrels the wine may have been aged in. That dry sensation you feel in your mouth when drinking a red wine is due to the tannin in the wine. The more tannic the wine, the more you will pucker up and feel the sensation.

The reason the level of tannins are relevant when it comes to pairing red wines and meat is that tannins cut through the fat of the meat. If one is enjoying a fattier cut, such as a juicy fatty rib eye steak, opt for a big Napa Cabernet for example. As bison is a high protein, lower fat alternative, a better choice would be a red wine with softer tannins such as a Pinot Noir, Malbec, a softer Syrah or perhaps a Tuscan Sangiovese.

As far as availability goes, upon a little investigative work, we learned of a company based in Montreal that markets high quality bison. The bison is raised without the use of any chemicals, hormones or steroids. Norfolk Bison ships across Canada and offer a wide range of wild game products. There is also one recipe we would like to share with you called the “Double Bison Sirloin; Michael Jordan’s style” that includes a touch of truffle oil and would pair beautifully with a silky Pinot Noir.

1970 was winding down when our founders, Bill Blosser and Susan Sokol Blosser pulled their ’68 VW Camper up to an abandoned prune orchard some 30 miles southwest of Portland. These moonstruck kids had little farming experience and just a basic knowledge of wine making. What they did have, in abundance, was a passion for growing the Pinot Noir grape and creating world-class wine. Soon after settling on this extraordinary land, they planted their first vines and cinched their place as pioneers in Oregon’s budding wine industry.

So my wine pick also hails from California, and I know you would love this wine too. I’m going with a Pinot Noir today that really delivers big and at a great price point. $18.90 in our market.And finding inexpensive Pinot noir is not that easy, this elusive grape that it is, so I am happy!

So from a family owned winery based in the Salinas Valley, Monterey County, this Pinot Noir is very enticing with an aroma of strawberries, hints of plum and spice, and full rich flavor with berries and cherries a hint of oak and spice. And to add to your Earth Day this winery was the first in Monterey to be certified SIP or Sustainable in Practice.My wine pick is the Hahn Winery Pinot Noir 2013. This will definitely be a standard go to Pinot for me.

Well I find myself in the same camp as Miles did in Sideways. He adored Pinot Noir as so do I! As you know Pinot Noir is often referred to as the heart break grape, because its so hard to grow. Just like the womanizer Jack broke Stephanie’s heart (played by Sandra Oh) in the movie. This grape can be very fickle indeed and break a winemakers heart too.

On this week’s radio show…with the Toronto International Film Festival in full swing we thought we would have a look at some of the roles that wine has played in a variety of movies and the impact that these films have had on you the consumer! Take the movie Sideways for example, the sales of Pinot Noir skyrocketed and what happened to the sales of Merlot?

They tanked…. for awhile anyways! Well we’re going to find out why because joining us on the show is Frank Ostini, the owner of the Hitching Post II Restaurant, frequented by Miles and Jack in the film Sideways, now celebrating it’s 10th anniversary.

Having discovered that MMA Welterweight champion Georges St. Pierre loves red wine we knew that we just had to meet with him.

Our opportunity arose when we were invited to meet GSP recently at the Sony Centre for the Performing Arts for the Canadian premiere of “The Striking Truth:” This documentary is based on the juxtaposing careers of charismatic and humble current Welterweight Campion of the UFC, Georges St-Pierre and the dynamic MMA fighter David “The Crow” Loiseau.

This red-carpet evening also included a live and interactive one on one question and answer period with Rogers Sportsnet Joe “Showdown” Ferraro host of MMA Connected and main cast members of the film, Welterweight Champion of UFC Georges St-Pierre: David Loiseau MMA Fighter: and director/producer of the documentary Steven J.Wong: from Steven J. Wong Films.

We also had a chance to chat with “Kenny Cabernet”, world renowned enologist and international wine consultant who explained the health benefits of red wine, and why Pinot Noir is one of the healthiest grapes packing the biggest antioxidant punch, which by the way is GSP’s favourite wine! The Wine Ladies TV, “One Sip At A Time” was there to capture it all.

When we discovered that UFC Welterweight Champion Georges St. Pierre is a wine lover, we knew we had to meet him. The opportunity arose recently when we were invited to attend the world premiere of “The Striking Truth” an exclusive documentary for charismatic Ultimate Fighting Champion Georges St-Pierre and dynamic MMA fighter David “The Crow” Loiseau.

The movie follows the two fighters over the past four years, starting with UFC 58 USA vs. Canada where Loiseau was fighting for the championship against Rich Franklin and St-Pierre was the co-main event against BJ Penn. The film juxtaposes their two careers with St-Pierre’s meteoric rise to UFC champion and Loiseau facing personal challenges, charting their respective ups and downs as they follow their paths.
